Stanleys Steam(c) Beer

Extract Version Ingredients: (5 Gallons)

  • 2 3.3 lb. Cans of Light Unhopped malt extract
  • 6 oz. Dark Crystal Malt
  • 6 oz. Light Crystal Malt
  • 2 oz. Rye Flakes
  • .75 oz Northern Brewer Hops (60 minutes)
  • 1 oz Northern Brewer Hops (45 minutes)
  • 1 oz Northern Brewer Hops (10 minutes)
  • 1/2 tsp. Irish Moss
  • Wyeast California Lager Yeast
  • 3/4 cup Corn sugar (priming)
  • Procedure: Crush grains and add to 2 gallons of warm water. Steep at 155F for 30 minutes. Strain and rinse with 168F water. Add extract and boil for 1 hour.

    Add hops as shown above. Add Irish Moss during last 30 minutes. Chill and add to 3 gallons of cold water (top fermenter to 5 gallons). Ferment at 60-65 degrees or so. Primary 5 days. Move to secondary for 7 days. Rack beer off sediment and prime with 3/4 cup of corn sugar and bottle.
    All Grain Version Ingredients: (5 Gallons)

    Substitute 7.5lbs. 2 row Pale Malt for the malt extract.
    Procedure: Crack all grains and mash in at 115F for a 40 minute rest, raise to 125F for 15 minutes, raise to 145F for 15 minute rest, raise to 156F for 60 minute rest. Mash out at 170F for 15 minutes. Sparge with with an additional 5 gallons of 170 degree water. Extend boil time to 90 minutes.
